VEGAN GRILLING RECIPES

It’s grilling season! Turn up the heat for seasonal vegan barbeques sure to please any appetite.

Vegetable Kebabs w/Black Bean Orzo
1 zucchini, sliced ½ inch thick
1 yellow squash, sliced ½ inch thick
1 pepper, any color, chunked
1 pkg. white mushrooms
1 red or Vidalia onion, quartered
2 corn on the cob, quartered 1
15-oz. can black beans, rinsed and drained  
½ cup olive oil
2 cloves garlic, crushed
2 tsp. chili powder
1 cup vegetable broth
1 cup beer (or water)
1/3 cup chopped cilantro
1 cup orzo
Salt and pepper to taste
Preheat grill to medium. In medium saucepan, bring ¼ cup olive oil, garlic, chili powder, cilantro, broth and beer to a boil. Cook for about 10 minutes on reduced heat. Prepare orzo per package directions. Thread the zucchini, squash, pepper, mushrooms, onion and corn onto skewers. Brush with ¼ cup olive oil. Grill for 10-15 minutes, turn and baste with the sauce mix. Heat beans in remaining sauce. Serve kebabs with sauce and beans over the orzo.  
Serves 4  
Variation: switch out black beans with chickpeas, and the orzo with rice, quinoa or couscous.
Grilled Vegetable Flatbreads
1 eggplant, sliced ½” thick
1 zucchini, sliced ½” thick, on diagonal
1 pepper, sliced lengthwise
1 Portobello mushroom cap, sliced
1 Vidalia or red onion, sliced
12 – 16 leaves of fresh spinach  
½ cup olive oil, separated
Salt and pepper
½ cup vegan parmesan cheese
1/3 cup pine nuts
½ cup green olives w/pimientos
4-8 slices vegan provolone cheese
4 large flatbreads, cut in half  
Preheat grill to medium heat. Or use a grill pan on top of stove or grill. In blender or food processor, puree spinach, pine nuts, olives and parmesan cheese with ¼ cup olive oil to make a pesto. Brush eggplant, zucchini, pepper, mushroom, and onion with ¼ cup olive oil. Salt and pepper to taste. Grill until charred, turning once, about 6-8 minutes. Spread the pesto on half of flatbread. Layer the grilled vegetables and cheese and add top ½ of bread. Place back on grill or grill pan to lightly grill the bread, turning once.  
Serves 4  
Variation: Any combination of fresh vegetables is great for this sandwich. Try different combinations for pestos and spreads by using black olives, different nuts, hummus, and various vegan cheeses.
